Artichoke heart dip [8m+]
A great healthy snack or puree for your toddler or baby.
– 2 big artichoke or 4 medium
– 2 tbsp cream cheese I’ve used Philadelphia.
1. Steam the artichoke till you can pull off the leaves easily. About 27-30 min.
2. Remove the leaves (save them for snacking to yourself) and get to the heart.
3. Blend the hearts with 2 tbsp of cream cheese and a little water from the steam. That’s it.
Serve it with grissini to dip in or steamed carrots or anything like that for your toddler. Or just serve it plain for your LO. I personally artichokes!
Here’s what I found about the benefits of artichoke:
The leaves are actually the source of a vast majority of its health benefits. In fact, artichoke leaf extract has proven to be an extremely beneficial food with a host of illness-fighting, age-extending properties.
Artichokes have been shown to improve various digestive health disorders. They significantly lower blood cholesterol levels, prevent heart disease and atherosclerosis, enhance detoxification reactions, as well as protect the liver from damage.
High in Antioxidants
A study done by the USDA found that artichokes have more antioxidants than any other vegetable and they ranked seventh in a study of the antioxidant levels of 1,000 different foods.
Cancer Prevention and Treatment
Studies done with artichoke leaf extract have found that they induce apoptosis (cell death) and reduce cell proliferation in many different forms of cancer, including prostate cancer, leukemia, and breast cancer.
Artichokes help the digestive system. They are a natural diuretic, they aid digestion, improve gallbladder function and, as mentioned above, they are of great benefit to the liver.
