Healthy egg muffins with hidden veggies
These Egg muffins with hidden veggies are a very simple way to sneak some extra nutrients into your kids meal without hearing any complains
These egg muffins are a wonderful recipe to sneak some extra veggies into your picky eaters diet and they are just so so so simple to make!
– 7-8 large eggs
– 1 big kale leave
– 1/2 red bell pepper
– ½ cup of green peas
– 1 cup of shredded cheese of any kind
– 1/2 cup of milk
You can basically add any vegetable you have in the fridge and bake it the same way
1. Chop the vegetables small and mix all the ingredients together and season if you’d like with thyme and oregano.
2. Oil the muffin tin with lots of oil, and pour the mixture into it.
3. Bake until they become swollen and a little brown on the top or edges. And make sure it’s baked properly in the middle. Bake it for about 30-40 min at 200C
That’s it. It was super fun and the kids enjoyed it big time. Ideal for breakfasts.
Note: it’s important to serve veggies next to on a plate and not just hide it in food, so that kids can get used to seeing vegetables too. They might surprise you and eat it
Also make sure your baby is not allergic to eggs before serving this.
