Organic Beet and Cottage Cheese Salad [10m+]
Note: parsley is a herb and therefore you have to be sure that your baby isn’t allergic to parsley. Check up with your pediatrician if you are unsure about it.
– 4 beets
– 1 cup of organic cottage cheese
– 1 handful parsley
– 2 tbsp olive oil
1. Peel and cut the beets into small baby bites and steam till they are well cooked, cut through the beets with a sharp knife and if it goes through easily then it’s done cooking.
2. Add the beets to a bowl and mix the cottage cheese and the finely chopped parsley.
3. Add 2 tbsp of olive oil and season with whatever you like and serve. It’s easy for your little one to grap the baby bites with a fork or with his/her fingers!
This is a big portion so it can be enjoyed by all family members but don’t give your infants too much beetroot due to its high level of nitrate. In Denmark it’s recommended that it only takes 1/10 part of a meal until the age of 1 yr. but every country has its own recommendations.
