Ingredients:
– 1 carrot
– 1/2 sweet potato
– 1 Kale leaf or 1 handful of spinach
– 4 broccoli florets
– 1/2 red bell pepper & 1/4 zucchini
– 8-10 eggs depending on the size
– 1/2 cup of shredded cheese of your choice
– Herbs of your choice and curry spice.

I feel that I’ve emptied my fridge into this recipe! You don’t need all the ingredients you can basically use any vegetable (suitable for baking) you have in the kitchen and use that instead. There’s plenty of room to replace the ingredients with another.
Method:
1. Wash, peel and then shred or cut all the produce with a food processor till it turns into tiny pieces.
2. In another bowl whisk the eggs and cheese and add the produce to the mixture.
3. In a buttered baking dish pour the mixture and place it in a preheated oven 170 C (I don’t remember for how long but it should be done when you stick a toothpick and it comes out clean.
Cut out shapes if you want, my son tend to eat things that are shaped and can be named.
